Meal Planning Monday

First off, how about a little motivation for this Monday. I love these truths!

Okay on to meal planning. Today, I‘m linking up with As a mom to 9, making meals that everyone likes is hard. I try to cook for the majority but someone is always wanting something different. Do other mamas have this problem?


These are always a hit because you can add what you want. We have taco meat(beef, chicken, or steak), beans, cheese dip and any toppings you like. These are easy to accomodate keto. I just eat meat, cheese, salsa, lettuce, tomato and sour cream. So basically, nachos without chips.

Tuesday-Sun dried tomato pasta with mozzarella cheese. I forgot to take a pic but the kids love it. This is an excellent Pinterest find.

Wednesday-BBQ Sandwiches with Red Robin onion rings and cole slaw. I use shredded rotisserie chicken. It saves so much time. And, these Red Robin onion rings are to die for. Seriously, pop them in the air fryer and they get so crispy and delicious.

Keto version- I use sugar free bbq. So, I eat the meat with a salad.

Thursday-Cheesy Tortellini Bake

Most of my kids like this. Some like it with meat sauce and some don’t. It’s just frozen tortellini, spaghetti sauce and mozzarella cheese. Kind of like a lazy lasagna. Just bale until cooked. I add a salad or green beans as a side and voila!

Friday- Pigs in a Blanket. This Friday is packed full. So, it’s an easy meal for the win. It’s just crescent rolls and hotdogs. I add to cheese to half of them. Bake according to crescent roll instructions. We, usually, have chips and dip or french fries in the air fryer with this meal.
