Motivational Meal Planning Monday

It was rainy here Friday and Saturday, so ballgames were canceled and we had a slower weekend. These two enjoyed some play time. When I went to take a pic, this is the best smile I could get.

I loved this quote as soon as I saw it this week! Just a little motivation for your Monday.

Now for a little meal planning.

Monday- Just a little spaghetti, French bread and salad. I like to use spaghetti squash for a keto option. I really can’t tell a difference and a little extra veggie never hurts.

Tuesday- Taco Tuesday. My kids love chicken tacos. I use the preshredded rotisserie chicken, add a packets of taco seasoning, lettuce, tomato and cheese. We have hard and soft shell. Super easy. The kiddos have received beans with theirs. I use carb counter tortillas for a keto version.

Wednesday- Burgers and Red Robin fries in the air fryer.

Thursday-Lemon Peppers Tilapia, salad and asparagus. Keto friendly

Friday- Chicken Strips in the air fryer, broccoli with cheese and mashed potatoes. A very kid friendly meal.

Here is a snack I love. Keto friendly and great if you are craving chips. There is, also, a ranch flavor that is my all time fave.

I made this over the weekend. But, I changed white chocolate pudding for vanilla. It was amazing. Obviously, not keto friendly. But, a little cheat doesn’t hurt here and there.
